Support the chantry, help the weak and poor, and generally being a good Samaritan will get on her good side. It's actually very easy to get up to sexy-time approval very quickly with Morrigan. etc.), by supporting independence/survival and education/knowledge in general, and by bashing the chantry. In general you can gain approval with her by actually being nice/agreeable toward her (rather than fearful because she's an apostate, etc. You can get her approval rating between 25 and 50 before even getting out of lothering, if you play it right. Morrigan is actually very easy to romance. Also it takes much less approval to have sex with her than it does for Leliana, which means her romance takes less time than Leliana's to be initiated. She's actually pretty easy - just don't be an absolute ass to her and she'll eventually soften up. It all comes down to personal preference, I like Morrigan more, not only for story and lore, but just overall in general, however Leliana isn't a bad option by any means. Both Morrigan and Leliana play a part in future DA games as you know, but by the way Inquisition ended, it looks like there still might be more in store regarding Morrigan, where Leliana's arc is starting to slowly fizzle out. She also has her own DLC released after her (Leliana does too, but it's not as essential to the main story).
She plays a huge role in the story and there's a very big plot point regarding her at the end of the game. Morrigan has a much, much bigger involvement in Origins than Leliana does.
